Tofu in Soy Ginger Marinade

Tofu in Soy Ginger Marinade

Serves about 4 as a hearty snack, and more as an appetizer

10 ounces extra firm tofu

Soy Ginger Marinade
1/3 cup soy sauce
2 Tablespoons toasted sesame oil
1 Tablespoon apple cider vinegar
1 Tablespoon honey
1 Tablespoon freshly crushed garlic
1 Tablespoon finely minced fresh ginger
1/2 teaspoon crushed red pepper, or to taste

1. Drain tofu, pat dry, and slice into sticks about 1/2-inch x 1/4 inch.  For that matter, make any sized sticks you want: if you want tofu to marinate quickly, make the sticks thinner, but if you plan to store the marinated tofu in the refrigerator to snack from during the week, chunkier slices are easier to handle.

2. Combine marinade ingredients in a shallow storage dish and whisk to blend. (A container wide enough to hold the tofu sticks in one or two layers is ideal)

3. Add tofu, making sure all surfaces are covered with marinade. Set aside for at least 10 minutes, and then tilt dish back and forth to allow marinade to flow around tofu before setting aside for another 10 minutes or so. Taste. It should be ready to eat. It will keep happily in your refrigerator for several days although tofu will darken to the color of the soy sauce.
